SPICY THAI RED CURRY CHICKEN DRUMSTICKS
INGREDIENTS
- 6 Skinless Chicken Drumsticks*
- Coating Sauce:
- 2 TB Thai Red Curry Paste
- 1 TB Fresh Chopped Cilantro
- 1 TB Coconut Aminos
- 1 TB Brown Rice Vinegar
- 1 Tsp Dried Lemongrass
- 1 Tsp Onion Powder
- 1 Tsp Minced Garlic
- ½ Tsp Ground Ginger
- Zest of 1 Lime
- Juice of ½ a Lime
INSTRUCTIONS
- Preheat the oven to 375°F.
- In a bowl, mix together all the sauce ingredients. Fully coat the chicken drumsticks with the sauce.
- On an oven-safe rack or a baking dish with a homemade foil rack** (to let the grease fall) evenly space out the drumsticks.
- Bake the drumsticks in the oven for 30-35 minutes or until thoroughly cooked
